It’s definitely starting to feel more like spring. Little flowers are breaking through and the weather feels a bit brighter. I can’t believe we’re already well into March. This year is speeding by so far. Which is a nice reminder for me to slow down a little every now and then to be fully present and take in everything around me. Mood Boosting Cacao Smoothie

This morning I had a doctor’s appointment for a blood test. They’re not so bad but I do tend to get quite light-headed afterwards. After walking home (in the gorgeous sun!!) I knew I needed something sweet to fill my tummy up. Although I don’t find blood tests particularly bad, usually I’m like ‘oh, is that it?!’ once it’s over, I found my stomach twisting itself in knots with nerves as soon as I was out of bed. Spiced Red Lentil Bowl

For the last few days I have been craving comfort. Comfort in all forms. Hot tea, blankets, restful sleep, a good book, lots of cuddles, candles etc. When I recognise I’m in a low place I try my best to look to the simple, little things I know will bring me some comfort and ease the heavy feeling. Oatmeal & Raisin Breakfast Cookies

Trying to make a plant-based, gluten-free and refined sugar-free cookie is quite a difficult task. I’ve always ended up with something that is super dense, cakey, flaky and is barely edible the next day. I just wanted a cookie that was crispy on the outside, soft on the inside and free of overly processed ingredients I knew would mess with my stomach and skin. Is that such a big ask?! Banana & Walnut Loaf with Blueberry Compote

Yesterday our blender broke and so, obviously all I have been craving yesterday and today was anything that is made with the aid of a blender. Especially this morning. All I wanted for breakfast was a smoothie or blender pancakes (the BEST pancakes). I can tell I will probably (and very annoyingly) feel this way until we have the time to buy a replacement one.
