It’s been quite a while since I last created or wrote something here. There has been a lot of changes happening in my life lately. At the start of the year I asked the universe for a transformative period. I was definitely granted that. It’s been a lot and it hasn’t been the easiest of times but it has certainly been needed. I feel closer to my most authentic self. I feel more aligned with my native soul than I have in a long, long time. Leaning into trusting the universe and trusting myself is an ongoing process that is surprising me almost daily. It’s a beautiful process and every day it excites me a little more.
So, with things taking a little quiet spell I thought it would be nice to come back to this space and share something with you. It’s simple and good. Which is exactly what I am craving in this moment – nothing too complicated.
This recipe makes up enough dry mixture to keep you going for a while, just take what you need and soak overnight.
Overnight Breakfast Bowl
For the dry mix
1/2 cup chia seeds
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup cacao nibs
1/2 desiccated or shredded coconut
1/2 cup sultanas
For the breakfast bowl
1 cup plant-based milk
1/2-1 tsp sweetener of choice (I used 1/2 tsp raw wild heather honey)
your choice of summer fruit (here I went for cherries and strawberries but use whatever you have/fancy)
2 heaped tbsp coconut yoghurt
extra cacao nibs to garnish
Add all the dry ingredients to a jar and shake it up. To create the breakfast bowl, take 3-4 heaped tbsp of dry mixture and add to a jar. Add 1 cup of plant-based milk (I used a homemade cashew and coconut milk), add the honey (or sweetener of choice), stir well and chill in the fridge overnight.
Add the coconut yoghurt and breakfast mix to a bowl, top with the summer fruit and sprinkle some extra cacao nibs on top for texture.
