Mango Salsa

Here’s a fun recipe to make when you are entertaining or want to bring something with you to a dinner party/picnic/night in with friends. It’s super easy and quick to make but I’m sure will impress! Adding fruit to dishes is something that I love to do as often as I can. Mango is a favourite of mine for adding to salads, especially when there are lots of greens involved. I thought it would bring an even fresher, sunnier vibe to your usual tomato salsa. Paired with a big squeeze of lime juice and coriander it’s a real winner!

This salsa is a perfect addition to any spread as a dip but I’d also recommend using it as a topping on veggie burgers (like I did with these ones), adding it to your bowl of veggies or in a falafel wrap. You could also swap in some pineapple instead of the mango if you fancy, that also works really well!

I used chilli flakes in this recipe as I’m not a huge fan of a lot of heat or spicy foods, you could easily chop up a fresh chilli instead if that’s more your thing and it would work beautifully. It’s all about what works best for you (and what you have on hand!).

Mango Salsa

2 spring onions

1 big clove garlic

1/2 cup fresh tomatoes

1/2 cup fresh mango

1/2 lime, juice

1 tbsp fresh coriander, finely chopped

pinch chilli flakes

glug of olive oil

salt and pepper, to taste if needed

 

Chop the spring onions and garlic as fine as you can and add to a bowl (or jug), add the rest of the ingredients. Mix everything together. Serve!
