Puffed Quinoa, Pistachio & Dark Chocolate Bars

Today I almost burnt the fingerprints off of two of my fingers, attempted a run in the park (shin splints, ugh) but these bars also happened and it was real sunny so I guess that kind of evensĀ things out!

For these bars you can totally use store-bought pre-puffed quinoa but it’s actually quite fun doing it yourself! Please keep in mind that I also find peeling almonds and chickpeas fun so this might not apply to you. But you should definitely give it a go, it’s very similar to read more

Plus, daffodils were popping their sunshine-yellow heads up everywhere which is guaranteed to bring a smile to pretty much anybody’s face. Walks through the park are the perfect punctuation read more

This morning I had a doctor’s appointment for a blood test. They’re not so bad but I do tend to get quite light-headed afterwards. After walking home (in the gorgeous sun!!) I knew I needed something sweet to fill my tummy up. Although I don’t find blood tests particularly bad, usually I’m like ‘oh, is that it?!’ once it’s over, I found my stomach twisting itself in knots with nerves as soon as I was out of bed. This resulted in no breakfast. read more
