Simple Almond & Vanilla Biscuits Topped with Cacao

Today’s offerings; simple, delicate biscuits and fading flowers.

The weather yesterday was all over the place here in Scotland. We had brightly shining sun accompanied by rain, snow, hailstones and some rough winds. The temperature also dropped a bit and our home had quite a chill. I knew there was a long day ahead of us come noon so I baked these biscuits in the morning to bring a little joy.

Brazil Nut & Espresso Loaf

I’m not a coffee drinker, at all. Ever. But I do really love cake or chocolate that’s infused with coffee for some reason. So, when Steven requested some sort of coffee cake/loaf this week, I was like sure! The classic combination of coffee and walnut is always a good idea but I decided to mix it up a little and sub in some brazil nuts in place of the walnuts. It was a good idea.

Puffed Quinoa, Pistachio & Dark Chocolate Bars

Today I almost burnt the fingerprints off of two of my fingers, attempted a run in the park (shin splints, ugh) but these bars also happened and it was real sunny so I guess that kind of evens things out!

Apple, Almond & Chocolate Scones

So, these aren’t really like the kind of scones you’d get if you went out for an afternoon tea but I wasn’t completely sure what to call them and they definitely landed closest to a scone.
