I feel like I should state upfront that I know this isn’t so much of a recipe, it’s the most simple action of assembling a few delicious foods together. I just felt the need to share these dates with you because they really are my favourite indulgence.
It’s been almost a month since I last posted here. It’s been a busy and emotional few weeks. I felt drained of everything within me. But here I am, feeling much more like myself and writing this post for you. The fall equinox slipped by last night and I am taking it as my cue to usher in some welcome change. Change in the form of being more inward thinking and reflective, drawing my loved ones closer for quality time, being out in the crisp autumn air and allowing myself to feel what I feel in each moment.
The changing of seasons always has me feeling hopeful, desirous of what’s coming next and wanting to run at it head first. Especially when it comes to the latter part of the year. Autumn and winter hold a special magic for me.
A close friend of mine hosted a Fall Fair last weekend and invited me to come along with some homemade plant-based goodness. I sold out of pretty much everything on my table and had a lot of conversations about living a more conscious lifestyle. It was uplifting to hear so many people wanting to implement these changes in their life and do what they can to make it stick. I’m thankful for the opportunity, even if I was up until almost 2am baking the night before.
Almond Butter & Cacao Nib Stuffed Dates
This is the easiest and most delicious snack. I love to eat one of these as dessert when I’m needing something sweet after dinner or as a simple pleasure in the middle of the day.
I use medjool dates because they taste like nature’s version of caramel. Slice each date and remove the stone. Use a tsp of almond butter per date and top with cacao nibs for some bitterness. You could also add a little sprinkling of organic sea salt on top if you fancy.
